Ingredients:

  • 1 ½ lbs unpeeled, large shrimp
  • ¼ cup tequila
  • 2 tbs frozen orange juice concentrate, thawed
  • 2 tbs fresh lime juice
  • 2 garlic cloves, minced
  • 1 jalapeno, seeded and minced
  • ½ tsp salt
  • 2 tbs chopped fresh cilantro
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 orange, cut into ½-inch wedges
  • 1 lime, cut into ½-inch wedges

Directions:

  1. Peel shrimp, leaving tails intact, and de-vein, if desired
  2. Stir together tequila, orange and lime juice, garlic, jalapeno, salt and cilantro in a large bowl
  3. Add shrimp; cover and chill 30 minutes
  4. Alternately thread shrimp, bell pepper, and orange and lime wedges on 8 (10-12 inch) skewers
  5. Grill covered with lid, over medium-high heat (350-400 degrees) 5 to 6 minutes on each side or until done
