Ingredients:
- 2 tbs oil
- 2 lbs smoked hot sausage – cut into 2” lengths
- 1 large onion – finely diced
- 1 large green bell pepper – finely diced
- 3 stalks of celery – finely diced
- 4 cups of water
- 1 15 oz can of tomato sauce
- 3 tbs salt
- 1 tsp freshly ground black pepper
- 2 cups of converted rice
Directions:
- Heat oil in a 5 qt pot over medium heat
- Add sausages – cook until brown – about 5 minutes
- Add onions, green pepper, celery – cook about 3 minutes while stirring
- Add water, tomato sauce, salt, and pepper
- Heat to a boil – stir in rice – continue stirring until the sausage comes to the top
- Reduce heat to a simmer – cook covered about 20 minutes
