Creole Jambalaya Recipe
Ingredients:
- 2 tbs butter or margarine
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 8 green onions, chopped
- 2 celery ribs, chopped
- 3 cups cubed cooked ham (1 lb)
- 1 lb Cajun or smoked sausage, sliced
- 1 (8 oz) can tomato sauce
- ½ tsp salt
- ½ tsp freshly ground black pepper
- ¼ tsp ground red pepper
- 5 cups hot cooked rice
Directions:
- Melt butter in Dutch oven over medium heat
- Add onion, bell pepper, green onions, and celery; saute until tender
- Add ham, sausage, tomato sauce, salt, black pepper, and red pepper; cook, stirring occasionally, 20 minutes
- Stir in rice, cover, and cook, stirring occasionally, 30 minutes over low heat
Yield: 8 servings
