Ingredients:
- 2 Avocados
- 1 oz olive oil
- 1 cup onion, chopped
- 2 cups red pepper, diced
- 1 dz eggs
- 2 oz cilantro, chopped
- 1 ½ tsp hot sauce
- 1 tsp salt
- 1 ½ cups tortilla chips, broken
- 4 oz jack cheese, shredded
Directions:
- Cut avocado lengthwise around the pit; twist halves to separate; strike pit with knife blade and pull to remove; gently scoop out flesh with a spoon; dice and set aside
- Heat oil over medium-high heat; add onions; cook and stir until clear; add red peppers; cook and stir until onion begins to brown; set aside
- In a bowl, whisk eggs, cilantro, hot sauce, and salt; stir in cooled onions and peppers
- In a lightly oiled pan, cook and stir egg mixture until set but still soft; stir in chips; sprinkle with cheese; cover and remove from heat; let stand until cheese begins to melt.
- Serve with avocado on top
