Recipe Name: Citrus Marinated Chicken
Recipe Information:

This is a mexican based recipe. The combination of lime juice, chili powder and tequila give it a great punch of flavor without overpowering the palate.

4 Boneless, skinless chicken breasts

Juice and rind of 1 orange

Juice of 3 limes

1/4 C tequila (you can substitute with beer or pineapple juice)

8-10 cloves of minced garlic

1 Tbsp chili powder

1 Tbsp paprika

2 Tbsp olive oil

2 tsp cumin

1/2 Tbsp dried cilantro, or 1/2 bunch fresh, chopped coarsely

Pinch of sugar (not necesary if you use pineapple juice)

1 tsp salt

1 Tbsp crushed red pepper

Recipe Instructions:

Place chicken in a non-metallic dish.

Combine all other ingredients together and pour over chicken.

Turn chicken to coat thoroughly.

Cover and marinate at least 1 hour in the fridge. I like more flavor so I marinate about 6 hours, you can even marinate overnight.

Fire up the grill and let it heat up to 500 degrees. Turn heat down to med-high.

Place chicken on grill for 15 minutes. Turn once and baste with leftover marinade. Grill for a further 10 minutes or until juices run clear when pierced through the thickest part of the chicken.

Recipe Summary:

This is a great summer time (or any time) recipe that’s full of flavor. Everyone at my table always enjoys it.
