Santa Fe Grilled Rib-Eye Tacos

This is my family's favorite taco recipe.  Its very easy to do. You can make the aioli and avocado salsa ahead of time.  Then just grill, assemble and enjoy

Ingredients:

For the Avacado Corn Salsa:

  • 1 tbsp. red bell pepper, diced
  • ½ tsp. spanish onions, diced
  • ½ avocado, diced
  • Juice of ½  lime
  • 1 ½ tsp. kosher salt
  • 2 tsp.cilantro, chopped
  • 1 ½ tbsp. chopped tomatoes
  • 1 tbsp. canned corn kernels
  • 1/8 tsp. cumin powder
  • 1 ½ tbsp.canned black olives, sliced
  • ½ tsp. garlic, minced

For the Spicy Aioli

  • ¼ cup mayonnaise
  • 2 tsp. Siracha chili sauce
  • 1/8 tsp. sesame oil

 For the Steaks:

  • 1 (12 oz) ribeye steak (trimmed of fat)
  • 1 ½ tsp.olive oil
  • 1 tsp. OLD BAY seasoning
  • 2 tsp. black pepper, ground
  • 4 – (4”) flour tortillas
  • ¾ cup iceburg lettuce, shredded
  • 2 tbsp. cotija cheese, shaved
  • ¼ cheddar cheese, shredded
Recipe Instructions:
  1. Heat a gas grill to medium-high heat
  2. Combine the first 11 ingredients except 1 tsp. of the kosher salt  in a small bowl.  Set aside.
  3. Mix together the mayonnaise, Siracha and sesame oil and set aside.
  4. Rub the rib eye steak with the olive oil, OLD BAY seasoning, ground pepper and
    remaining kosher salt.   
  5. Cook the ribeye steak on the grill for 6-7 minutes on each side or until a thermometer reads
    135 degrees.   
  6. Remove the steaks from the heat and let rest on a cutting board.
  7. Place the tortillas on the grill and heat for approximately 45 seconds on each side.
  8. Place each tortilla on a plate. Spread 2 tsp. of the spicy aioli on each tortilla, followed by 2 tbsp. of the avocado salsa.  Divide the shredded lettuce among each taco.
  9. Slice the rib eye steak into ¼ inch slices.  Divide among each taco.
  10. Sprinkle cotija cheese and cheddar cheese among each taco.  Fold each taco upright.
  11. Repeat to make 4 tacos.
  12. Serve and enjoy.

Just make sure you have your aioli and salsa ready and all you have to do is grill
