Mmmmm, pork tenderloins. Imagine a hard days work of yard work while you work up a BIG appetite. After you are done and the tools are all put away, you grab a cold drink and put the pork on the barbecue. The tantalizing smell of the grilling meat hits the spot as you anticipate the meal to come.
Here is a great recipe for marinated pork tenderloins.
Ingredients for the marinade:
– 1 cup pineapple juice
– 1/3 cup dark corn syrup
– 1/4 cup soy sauce
– 1 tablespoon prepared mustard
– 1 garlic clove, pressed
– 1/2 teaspoon fresh ground black pepper
– 2 pork tenderloins
Directions:
Combine first 6 ingredients in a shallow dish. Reserve 1/3 cup marinade and set aside.
Pierce pork tenderloins several times with a fork, and place in remaining marinade, turning to coat. Cover and chill for 2 hours.
Remove pork from marinade, discarding the marinade. Grill, covered with grill lid over medium heat 12 minutes per side or until a meat thermometer registers 160, turning and basting occasionally with reserved 1/3 cup marinade.
