Shrimp Gumbo Recipe
Ingredients:
- ¾ lb small orka pods, washed, trimmed, sliced ¼ in thick or 1 (10 oz) package frozen sliced okra
- ¼ cup olive oil
- 2/3 cups scallions, chopped (include some green tops)
- 2 cloves garlic; minced
- 1 (28 oz) can tomatoes
- ½ cup boiling water
- 2 bay leaves
- 1 tsp salt
- ¼ tsp hot red pepper seasoning
- 1 lb fresh/frozen raw shrimp, peeled and de-veined
- 1/8 tsp file powder
- hot cooked rice
Directions:
- Saute okra 2 minutes on a side in oil, over moderate heat until golden, drain on paper towel and reserve
- Add scallions and garlic to pan, stir-fry 3-5 minutes until limp
- Add water, bay leaves, salt, hot sauce, tomatoes (with liquid), simmer uncovered 20-25 minutes, stirring occasionally, until slightly thickened
- Add okra, shrimp, cook 3-5 minutes, just until shrimp turn pink
- Remove bay leaves, stir in file’ powder
- Serve over boiled rice
