We have more cucumbers than what the law allows…and more are coming. We won’t ever have to buy another jar of pickles ever again LOL. BUT the good thing about cucumbers is that you can make cold salads with them. Since I am grilling ribs for some of my staff this week, Jackie said she would make her famous deviled eggs and I have a choice between two cucumber salads. I like both but don’t know which one to make. They are both easy so probably will make them both. CREAMY CUCUMBER SALAD

EVERYDAY INGREDIENTS

1 medium cucumber, diced
2 plum tomatoes, diced
4 green onions, with tops, sliced
1/2 cup sour cream
1/4 teaspoon celery salt
1/8 teaspoon freshly cracked pepper

SIMPLE INSTRUCTIONS:

STEP ONE: Assemble all ingredients and cooking utensils.
STEP TWO: Place cucumbers, tomatoes, and onions in a bowl.
STEP THREE: Stir together sour cream, celery salt, and freshly cracked pepper in another bowl.
LAST STEP: Pour dressing over the cucumbers and mix gently. Refrigerate overnight.
