Beer Battered Onion Rings

Ingredients:

  • 1 cup all purpose flour plus extra for dusting
  • 1 cup beer
  • 2 Vidalia onions, peeled and cut crosswise; 1/3 inch thick and separated into rings
  • Vegetable oil for frying
  • Salt

Directions:

  1. Put flour into a bowl and make a well in center
  2. Pour beer into well and whisk until mixture is combined
  3. Strain batter through a sieve into clean bowl; let it rest, covered for 1 hour
  4. Dust onion rings with additional flour, shaking off excess
  5. Coat dusted rings with batter
  6. Fry onion rings in 2 inches of preheated 370 degree oil until golden
  7. Transfer to paper towels to drain; sprinkling with salt before fully drained
