Beer Battered Onion Rings

Ingredients:
- 1 cup all purpose flour plus extra for dusting
- 1 cup beer
- 2 Vidalia onions, peeled and cut crosswise; 1/3 inch thick and separated into rings
- Vegetable oil for frying
- Salt
Directions:
- Put flour into a bowl and make a well in center
- Pour beer into well and whisk until mixture is combined
- Strain batter through a sieve into clean bowl; let it rest, covered for 1 hour
- Dust onion rings with additional flour, shaking off excess
- Coat dusted rings with batter
- Fry onion rings in 2 inches of preheated 370 degree oil until golden
- Transfer to paper towels to drain; sprinkling with salt before fully drained
