Shrimp Gumbo Recipe

Ingredients:

  • ¾ lb small orka pods, washed, trimmed, sliced ¼ in thick or 1 (10 oz) package frozen sliced okra
  • ¼ cup olive oil
  • 2/3 cups scallions, chopped (include some green tops)
  • 2 cloves garlic; minced
  • 1 (28 oz) can tomatoes
  • ½ cup boiling water
  • 2 bay leaves
  • 1 tsp salt
  • ¼ tsp hot red pepper seasoning
  • 1 lb fresh/frozen raw shrimp, peeled and de-veined
  • 1/8 tsp file powder
  • hot cooked rice

Directions:

  1. Saute okra 2 minutes on a side in oil, over moderate heat until golden, drain on paper towel and reserve
  2. Add scallions and garlic to pan, stir-fry 3-5 minutes until limp
  3. Add water, bay leaves, salt, hot sauce, tomatoes (with liquid), simmer uncovered 20-25 minutes, stirring occasionally, until slightly thickened
  4. Add okra, shrimp, cook 3-5 minutes, just until shrimp turn pink
  5. Remove bay leaves, stir in file’ powder
  6. Serve over boiled rice

Yield: 4 servings
