Cajun Fried Rice Recipe

Ingredients:

  • 1½ tbs soy sauce (use lite soy if preferred)
  • 2 tsp toasted sesame oil, divided
  • 2 large cloves garlic, minced
  • 2 tsp minced gingerroot
  • 3 tbs Tabasco sauce, divided
  • ½ lb peeled crawfish tails or shrimp
  • 3 eggs
  • 1¼ tsp salt, divided
  • 3 tbs peanut oil, divided
  • 1 small onion, quartered and thinly sliced
  • 3 cups cooked rice
  • 1½ cups bean sprouts
  • ¾ cups frozen green peas
  • Black pepper to taste (use red pepper if preferred)
  • 3 tbs cooking oil (use virgin olive oil if preferred)

Directions:

  1. In a small bowl combine soy sauce, 1 tsp sesame oil, garlic, ginger, and 2 tsp Tabasco
  2. Mix well, stir in crawfish, and set aside
  3. In another bowl beat eggs with ¼ tsp sea salt, 1 tsp sesame oil, and 1 tsp Tabasco sauce
  4. Heat wok or large skillet until hot; add 1 tbs oil
  5. Add crawfish mixture; stir-fry 3 to 4 minutes or until crawfish are done
  6. Remove crawfish mixture from wok and set aside
  7. Add 1 tbs oil to wok and bring to heat
  8. Add onion; stir-fry 1 to 2 minutes and remove
  9. Add 1 tbs oil to wok and bring to heat
  10. Add egg mixture; stir-fry 1 minute or until done
  11. Add cold rice; stir-fry 3 to 4 minutes
  12. Add crawfish mixture, cooked onions, bean sprouts, peas, ¾ tsp salt, and pepper; stir-fry 2 minutes or until all ingredients are hot
