Beer Battered Fish Recipe

Ingredients:

  • 4 lbs fish fillets (catfish, bass, firm fish of your choosing)
  • Lime juice
  • Flour; seasoned with salt and pepper to taste
  • 1 cup vegetable oil
  • Batter:
  • 2 cups flour
  • 1 tsp salt
  • ½ tsp cayenne pepper
  • 2 cups beer of your choosing

Directions:

  1. Slice fillets into 2-inch strips; sprinkle with lime juice; roll in seasoned flour
  2. Prepare batter by combining flour, salt, and cayenne pepper; gradually blend in beer until thoroughly mixed
  3. Heat oil in large pot, fish fryer, or cast iron dutch oven
  4. Dip fillet strips into batter; fry in hot oil until golden brown; drain on paper towel
  5. Serve with hot sauce, tartar sauce, or malt vinegar

Yield: 8 servings
