Beer Battered Fish Recipe

Ingredients:
- 4 lbs fish fillets (catfish, bass, firm fish of your choosing)
- Lime juice
- Flour; seasoned with salt and pepper to taste
- 1 cup vegetable oil
- Batter:
- 2 cups flour
- 1 tsp salt
- ½ tsp cayenne pepper
- 2 cups beer of your choosing
Directions:
- Slice fillets into 2-inch strips; sprinkle with lime juice; roll in seasoned flour
- Prepare batter by combining flour, salt, and cayenne pepper; gradually blend in beer until thoroughly mixed
- Heat oil in large pot, fish fryer, or cast iron dutch oven
- Dip fillet strips into batter; fry in hot oil until golden brown; drain on paper towel
- Serve with hot sauce, tartar sauce, or malt vinegar
Yield: 8 servings
