Patrick has never been one to eat sweets. If given a choice between and apple and chocolate…he would choose the apple 100% of the time. He is 16, just started driving, starts his first job sacking groceries next week and we STILL have to hide the maraschino cherries from him. He will eat a whole jar before we can get the groceries out of the truck.

Well when he doesn’t eat the cherries I like to use them to make this Chocolate Covered Cherry pie. I am not “partial” to chocolate covered cherries but I can eat my weight in these pies (if my diabetic doctor would let me.) Since I can’t eat the pie I thought you could. Try this recipe and let me know how it turns out.

Chocolate Covered Cherry Pie

Everyday Ingredients:

1 (8 or 9-inch) graham cracker pie crust or homemade graham cracker pie crust
1 cup (6 ounces) semi-sweet chocolate morsels
1 can (14 oz.) sweetened condensed milk
1/2 teaspoon salt
1 (21-ounce) can cherry pie filling
1/2 teaspoon almond extract
8 stemmed maraschino cherries

SIMPLE INSTRUCTIONS:

STEP ONE: Assemble all ingredients and cooking utensils.

STEP TWO: Prepare a graham cracker pie crust. In a saucepan, over low heat, bring chocolate chips, sweetened condensed milk and salt to a boil, stirring continuously until blended.

STEP THREE: Mix in cherry pie filling and almond extract. Pour into the prepared graham cracker pie crust.

LAST STEP: Chill at least 2 hours. Garnish with 8 stemmed maraschino cherries.

Makes 8 servings.
