Hickory Smoked Grilled Sirloin Burger, with Fried Egg, Sauteed Onions and Chipotle and Basil Aioli

Recipe Information:

This recipe comes from a version of a burger I had from a food truck.  I took it and made it my own by using different spices and grilling it with hickory chips.

Ingredients:
Fresh Burger Buns
2lbs of ground sirloin, divide into fourths (8oz)
4 tablespoons olive oil, 1/2 tablespoon for each burger
2 Garlic cloves, minced finely
8 tsp Worcestershire Sauce, 2 tsp for each burger
4 tsp Sea salt, 1 tsp for each burger
1/2 cup Mayonnaise
4 large leaves of Fresh Basil
1tablespoon Chipotle powder
1 tablespoon lemon juice
1 white onion, sliced thinly
1 tablespoon sunflower oil
1 tablespoon butter
4 fresh Eggs
(Hickory chips optional)
Recipe Instructions:
On a flat surface, place divided 8oz ground sirloin and add
Worcestershire sauce, sea salt and some garlic to each burger. Add in olive oil and mix thoroughly with hands and form patties.  Take fresh pepper grinder and pepper top of each burger.  Set aside.

Prepare outdoor grill (either gas or charcoal).  Have a low to medium heat setting for grill, so burgers can slow cook. Take aluminum foil and place hickory chips in center, form pouch with foil.  Leave a small slit in top of pouch.  Place on grill (not on top of coals, place off to the side) chips will smoke. When grill is ready, put burgers on grill.  Cook to desired temperature.

Coat saute pan with sunflower oil and add sliced onions.  Brown onions over medium heat, about 10 minutes.

Meanwhile, in food processor, add mayonnaise, fresh basil, and lemon juice.  Chop until well mixed.

Heat skillet with butter over medium heat.  Crack eggs into pan and let whites set. Cover and cook for 2 minutes.  

Pull burgers off grill.  Set aside.  Toast buns for 2 minutes on grill.
Build burger by spread thinly aioli on both buns, place burger on bottom bun.  Put one egg on each burger.  Carefully place onions in stack on burger.  Place top bun on gently, do not press down.  Serve.

Surprise your family and friends with a unique twist on the burger.  The eggs are runny and the fat mixed with the burger is an amazing combo.
