I love the combination of veal and sage, so I came up with this idea.  Hope you love it too.

Ingredients:

4  8-10 ounce veal rib chops


2 cloves garlic, chopped


2 tablespoons fresh sage, chopped


Salt and freshly ground black pepper


Extra virgin olive oil


Sage butter (recipe follows)


Recipe Instructions:

Sage butter:


Combine 2 tablespoons softened butter with 1 tablespoon chopped fresh sage.


Mix garlic and sage. Season veal with salt and pepper on both sides. Rub sage mixture on each side. Drizzle each side with olive oil. Let rest in the refrigerator for several hours. Remove from refrigerator about an hour before grilling. Grill over high heat until desired doneness. Top with a dollop of sage butter. Serves 4
